We haven't really changed anything with the Riesling since we started making it in 1980 -- always aiming for an off-dry style with about 1.5 percent residual sugar, which is tart enough to give you that pleasing sweet-and-sour tang that goes so well with spicy foods, yet rich enough to stand alone as a sipping wine.
