I thought it would be fun to do something fun at the restaurant to honor the Olympic Games.

It is crucial that restaurants match sales with shipments. If demand for an item exceeds supply, individual restaurants are faced with either unhappy customers or higher costs when they have to place special orders at the last minute. Conversely, an over-supply of a product is an unnecessary expense. Although a great restaurant experience must include great food, a bad restaurant experience can be achieved through bad service alone. Ideally, service is invisible. You notice it only when something goes wrong.

To get to New York, I was actually on my way to Brazil to help someone open a restaurant and stopped in Florida and met an old college buddy of mine who had a restaurant called Rocco. I came up to open that and I've been in New York for 11 years.

When I arrived in London 11 years ago, restaurant service was terrible. It's getting better every year. Americans tend to be over-the-top about complaining.

I make fun wherever I go... If I go to a restaurant by myself, rest assured, people will be talking about it. I always have a great deal of fun being with people. It's part of the journey.

We pretty much ignore them. They are so over the top that I think they come off as just a public relations hatchet man for the restaurant and food processing industry.

Some of the things I think I learned from that were very educational as far as just paying bills - the basics in dealing with a restaurant like that. It was just life - the education involved in running the organization, even on a small level.
